While sugar cookies are most often associated with the winter holidays, adding a fall spin on the cookie using pumpkin does not hurt.
Cookie ingredients:
½ cup softened butter
½ cup vegetable oil
½ cup pumpkin puree (canned pumpkin)
1 cup granulated sugar
½ cup powdered sugar
½ teaspoon vanilla
2 large eggs
4 cups all purpose flour
¼ teaspoon cream of tartar
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon nutmeg
A pinch of cloves
Icing ingredients:
3 cups powdered sugar
4 tablespoons water
¼ teaspoon pumpkin pie spice
Directions:
Preheat oven to 350 degrees
Whisk the butter, oil, sugars, vanilla, eggs and pumpkin slowly together until well combined.
In small portions, combine the dry ingredients with the wet ingredients.
Scoop 1 ½ tablespoons of dough onto a baking sheet lined with parchment paper. Flatten the cookies by pressing the bottom of a water glass onto the top of the cookie.
Bake for eight to nine minutes.
Mix the powdered sugar, water, and pumpkin pie spice to create the icing. Spread the icing on the cookies once they have cooled.
